ABOUT PARO FESTIVAL – The Paro Tsechu is a Buddhist dance festival and one of the major annual events of Bhutan. The festival holds religious significance and is held to commemorate Guru Rinpoche, who brought tantric Buddhism, also known as Tibetan Buddhism, in Bhutan. The Paro Tsechu festival is a wonderful time to visit Bhutan, experience its ancient culture, and get enthralled in the celebrations. The festival comes alive with vibrant colors, music,dance and drama as people gather to enjoy the masked dances, and other sacred rituals.

Arrival in Siliguri to Phuentsholing, 4 hrs drives, Permits, Visa, documents for vehicle etc will be prepared today and will carry on the next day as well O/N Hotel

Phuentsholing to Paro, 6 hrs drive, in the mean time when the permits for guests and vehicle is ready, we will visit Zangtog Pelri Lhakhang and Kharbandi Gompa, Scenic drive with more breaks along, we will pass through, Jumja, Gedu, Chukha, Chimasam, Chapcha, Chuzom before opening up into Paro valley. Ura to Lingmithang, 4-5 hrs drive, enjoy the visit to pass Thumshingla, glance at rhododendron gardens at the pass, decent down to Namning bra- cliff the best water fall and wonderful scenic drive with more changes of seeing birds and wild animals as it falls under reserve forest. Lingmithang to Ranjung, Enjoy bird watching, drive to Kurichu, Mongar and further to ranjung for today’s camp site. 5 hrs drive. Overnight Camping

Rangjung halt, explore the radhi village, walking, talking, visit Ranjung temple. Overnight Camping

Day14: 14-Apr, 2015 | Tuesday
Ranjung to Samdrup Jongkhar, 7 hrs drive , see of your camping crew and depart for SJ. Visit Trashigang Dzong, Textile center at Khaling and stop at Wangromg, then into the thick forest of Samdru Jongkhar the best n scenic drive. Sometime we get to see great hornbills and rufus hornbills on the way. O/N Hotel

15 days overlanding trip

Monsoon arrived in India!!

Our wait for rains is over. Monsoon is finally here and so is the season of new growth. The dominant teaK trees are making the most of it. Big broad leaves have come up and has made the forest lush and dense. New shoots of green have replaced the old dry grass. After the long dry spell, this is certainly a welcome change for the deer, gaur, birds and other life forms. Insects and creepy crawlies are all out and one can hear their cacophony all around.
The onset of monsoon also marks the closure of the National Parks for tourists. This last season has so far been the best season for tiger sightings. We broke our own records with 10 sightings in a day this year. But the closure of national parks does not mean that we have nothing to do. This is the only time when we can access the higher mountains. The summer heat melts the snow and most of the hill roads and mountain passes open up. We already have two itineraries heading to the Kashmir Himalayas. We are also coming up with biking itineraries for which we have chosen the proven Royal Enfield bikes. Soon we will be out doing the recce. One of the most interesting things to experience will be riding on the World’s highest Motorable road, the Leh – Khardungla road. When the new season starts in October, we will be out again exploring the dense forests of Orissa (Satkosia Gorge) before we head out on our Delhi to Gangtok trip in January. This is going to be one of the most epic road trips ever done in India. A perfect mixture of forests, grasslands, desert, mountains, rivers, culture, food and lots more, this trips will take traveling in India to a completely new level. Traditional Indian snack!!

India’s popular snack that finds a place in almost every bakery or chaat shop – our very own Samosa. Savory comfort food at its best, a crisp exterior filled with a savory potato stuffing that goes very well over a hot cup of chai especially on a rain filled, cold day. Samosa is always store bought and on rare occasions prepared at home, like today.

ready to go in hot oil. 

Samosa Recipe

Prep & Cooking: 1 hr 15 mts

Makes approx 12 Samosas

.

Ingredients:

1 cup maida (all-purpose flour)

2 tbsp oil

large pinch ajwain (optional)

enough water to knead the maida

salt to taste

oil for deep frying

For the filling:

2 boiled potatoes, crumble

1/4 cup boiled peas

1/4 tsp grated ginger

1 tsp red chilli pwd

1/2 tsp coriander pwd

pinch cumin pwd

pinch kasuri methi

dash of lemon juice

pinch of garam masala

chopped coriander leaves

salt to taste

1 Mix the maida with salt, oil, ghee and ajwain, combine to form a crumbly mixture. Now slowly add enough water to make a pliable dough, not too soft. Divide the dough and shape into balls. Keep aside covered with moist cloth for 15-20 mts.
2 Meanwhile, heat a vessel, add oil, add cumin seeds and allow to brown. Add the ginger, spice powders and a tbsp of water and saute for a few secs. Add the crumbled potato and boiled peas and cook over medium flame for a few minutes, approx 3-4 mts. Add kasuri methi and lemon juice, combine. Add the coriander leaves and turn off heat.

3 Now that the stuffing is ready, prepare the outer layer for the samosas.
4 Roll each ball with the rolling pin into a slightly thin puri, slightly elongated in shape. Take a knife and divide the rolled puri into two by cutting through the center.

5 Now take a semi-circle piece of the roti, and make a fold in the shape of a triangle as shown in the image. Seal along the fold. Now place this cone between your thumb and index finger and place a ball of the stuffing inside. Wet your finger and run it along the edges of the dough with water and seal to enclose the stuffing.
6 Press the ends firmly so that the filling does not come out during the deep frying process. Prepare with the rest of the dough in the same manner.

7 Heat enough oil in a wide vessel to deep fry the samosas. Heat the oil till hot but not piping hot. Reduce flame to low medium and drop 2-3 samosas into the oil slowly and deep fry them till golden brown, turning them carefully to the other side so that it cooks on all sides. Deep fry on low to medium heat and not piping hot oil.
8 Remove onto absorbent paper and serve warm over a cup of chai.

Note:
Its better to make samosas in batches. Roll out, stuff and deep fry 3-4 samosas at a time (batch-wise). While preparing the next batch of samosas, reduce the stove flame and carry out the process. When deep frying the next batch, see that the oil is hot enough to deep fry. Keep the prepared samosas covered through out the preparation process.
